Day 18: Chickpea Salad Sandwich

Almost through the work week! Easy peasy breakfast today and very customizable. This is a non recipe: Mash some cooked chickpeas with vegan mayo and chipotle powder. Add a little bit of minced celery, black pepper and salt. Et Voila! I topped it with some gorgeous grated beet.
