It’s December 3rd! My Dad’s birthday!! He loves mushrooms, and taught me to love them too! This breakfast is probably not something he would eat, but nevertheless, I’m thinking of him. Happy birthday Daddy!
After today’s morning routine, I was craving something substantial. I had mushrooms sitting in the fridge as well as Julie Hasson’s delicious vegan sausages leftover from Thanksgiving. I chopped ‘em up, sweated out the mushrooms in a pan with some olive oil and salt, and added my diced sausage until they were both toasty. I washed some feathery romaine lettuce leaves (you know- the outer one’s that get soft from sitting in the fridge for a few days) which were perfect for this filling. Voila! Vegan spicy sausage and mushroom lettuce wraps!
